Foccacia (Base recipe)

Ingredients

Scale:
  • 500 g bread flour (12% protein content)
  • 400 g warm water
  • 16 g extra virgin olive oil
  • 7 g Instant yeast
  • 5 g honey, syrup or agave
  • 8 g salt

Method

  1. Mix warmed water (400g), honey and oil with yeast and let bloom for 5 min
  2. Mix flouring and salt in water mixture and knead until incorporated
  3. Cover and let rest for 15 minutes. Stretch and fold for 3-5 minutes. (Repeat this 2-3 times for better internal texture)
  4. Cover and let rest for 1 hour
  5. Grease pan with olive oil or butter
  6. spread the dough into the pan and then fold it into thirds, Then flip the dough seam-side down and gentily spread the dough and poke your fingers about 80% of the way into the dough (your fingers should not touch the pan)
